Yeast and Mushroom Production
In the production, manufacturing, and formulation of organic yeast, microorganisms, enzymes, drinking water, and salt (sodium chloride and potassium chloride) used in food processing are utilized. Other products and substances can only be used if they are produced and approved according to the provisions of the regulation.
Organic yeast should not be mixed with non-organic yeast in organic food and feed. If an entrepreneur cannot obtain yeast extract or autolysate from organic production, up to 5% (dry matter) of non-organic yeast extract or autolysate may be added to the substrate for organic yeast production.
The production of organic yeast involves the use of auxiliary substances listed in Section 3 of Annex VIII of the regulation, as well as microorganisms and enzyme preparations typically used in food processing, drinking water, and salt.
